Get your pancake on!

Pancake flipping heck! It’s that special day of the year where we all frantically throw our dinner through the air, hope to catch it again, and then smother it in…well, whatever takes your fancy to be honest. Shrove Tuesday, pancake day, call it what you will, we’ll just call it delicious!
So whether squeezing the day with some lemon juice, sweetening the moment with a sprinkle of sugar, or getting right into the meat of the situation with a bacon and syrup combo, we’ve got a very simple pancake recipe for you.
All you’ve left to do is get creative with the toppings, get nimble with the flip, and get ready to pick a pancake or two off the ceiling! It happens to the best of us.
INGREDIENTS
100g plain flour
2 large eggs
300ml milk
1 tbsp sunflower or vegetable oil plus a little extra for frying.
METHOD
Step 1 Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter. This should be similar in consistency to single cream.
Step 2 Set aside for 30 mins to rest if you have time, or start cooking straight away.
Step 3 Set a medium frying pan over a medium heat and carefully wipe it with some oiled kitchen paper.
Step 4 When hot, cook your pancakes for 1 min on each side until golden, using around half a ladleful of batter per pancake.
Step 5 Smother in your favourite toppings and devour like it's the last pancake on earth. Except it isn't, so rejoice and then immediately make another.
